Cream of Potato Soup
Cream Of Potato Soup is an moderately easy dinner. Made with 2 c. small diced potatoes, 2 minced medium onions, 2 stalks celery (including leaves), diced, 2 1/2 c. boiling water and 4 tbsp. butter or margarine, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Cook potatoes, onion and celery in the boiling water, covered, until very tender.
Meanwhile melt the butter in top of double boiler.
Add flour; stir until smooth, then add seasonings and milk.
Cook while stirring until smooth and thickened, then rub the potato mixture, liquid and all, through a sieve.
You should have 3 cups purΓ©e.
Add to sauce with parsley.
Heat and serve.
Serves 6.
