Corn Fritter
Indonesian corn fritters fry sweet kernels, shallot, scallion, chile, and coriander into ragged golden cakes. They are crisp at the edges, tender inside, and best with lime.

Crush half the corn kernels so the batter has both pulp and whole kernels.
Stir in rice flour, egg, scallions, shallots, garlic, chile, coriander, and shredded lime leaf.
Heat a shallow layer of oil until a spoonful of batter sizzles immediately.
Fry rough spoonfuls until crisp and golden on both sides.
Drain well and serve hot with lime wedges and extra sliced chile.
