Arroz Espanola(Spanish Rice)
Arroz Espanola(Spanish Rice) is an moderately easy dinner. Made with 3 tbsp. bacon drippings, 1 1/2 c. rice (do not use instant), 1/2 c. onion, sliced, 1/2 c. bell pepper and 1 (14 oz.) can tomatoes, this recipe delivers authentic, satisfying flavors. Melt bacon drippings in large skillet.
Add rice and brown.
When the rice is a golden brown, reduce heat and add onion, bell pepper, tomatoes, garlic and pepper.
Mix well and add 1 1/2 cups of warm water or enough to just cover rice.
Cover and let simmer until almost dry.
Add remaining water, cold a little at a time, cooking over low heat until fluffy.
This is the secret to fluffy rice.
