Wild Rice Soup
Wild Rice Soup is an moderately easy dinner. Made with 2 c. cooked wild rice, 2 tbsp. butter, 1 tbsp. onion, minced, 1/3 c. flour and 4 c. chicken broth, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Prepare wild rice as directed on package.
Melt butter in saucepan, saute onion until tender.
Blend in flour; gradually add broth.
Cook, stirring constantly, until mixture boils; boil and stir 1 minute.
Stir in rice, chicken and salt; simmer about 5 minutes.
Blend in half and half and sherry; heat to serving temperature.
Garnish with parsley or chives.
Serves 6.
