Vegetarian Spaghetti Sauce
Vegetarian Spaghetti Sauce is an moderately easy dinner. Made with 2 tbsp. olive oil, 2 onions, finely chopped, 4 cloves minced garlic, 2 large cans italian tomatoes and 1 (6 oz.) can tomato paste, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Saute onion and garlic in olive oil. Add tomatoes and break up with spoon. Add tomato paste, vegetables (raw ones first); anything goes, peppers, carrots, zucchini, mushrooms, corn, squash, broccoli, beans, etc.
Add spices.
Simmer about 45 minutes until vegetables are tender.
Stir in 1/4 cup Parmesan cheese if you like the sauce to be thicker.
Very low in calories and fat.
