Turkey Chowder(Low-Fat Soup)
Turkey Chowder(Low-Fat Soup) is an impressive dinner. Made with 1 tsp. olive oil, 1 large onion, sliced thin, 1/4 c. chopped green pepper, 3 medium carrots, diced and 3 medium potatoes, peeled and diced, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Heat oil in a large pot.
Saute onion and peppers until onion is translucent.
Add carrots, potatoes, celery, salt and spices. Mix well.
Add stock and simmer for 15 minutes until potatoes and carrots are soft.
Add turkey, corn and pimento.
Heat through but do not boil.
Just before serving, stir in parsley and adjust seasonings to taste.
