Tomato-Cucumber Cocktail
Tomato-Cucumber Cocktail is an moderately easy dinner. Made with 1 large cucumber, 2 (12 oz. each) cans vegetable juice cocktail, 1 1/2 tbsp. lemon juice, 1/4 tsp. celery salt and ice cubes, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Peel cucumbers; chop finely.
Cook in small amount of water on medium heat for about 5 minutes; drain well and process cucumbers and 2 cups of the vegetable juice cocktail in blender or food processor until smooth.
Pour into pitcher.
Stir in remaining vegetable juice and celery salt.
Serve over ice cubes in a tall glass, garnished with a cucumber slice.
