Tightwad Baked Beans
Tightwad Baked Beans is an moderately easy dinner. Made with 2 lb. dried beans, 1 tsp. baking soda, 1 medium onion, 1/2 lb. bacon and 1/4 c. brown sugar, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Soak the beans overnight in cold water.
In the morning pour off the soaking water and parboil beans with baking soda in fresh water until the skins are cracked when blown upon.
Cut onion in quarters and put in the bottom of a beanpot or a large casserole dish.
Add parboiled beans and put cut up bacon on top of the beans. Mix brown sugar, molasses, dry mustard and salt with a pint of water.
If needed, add more boiling water while baking.
Bake at 300Β° for about 6 hours.
