Swiss Steak
Swiss Steak is an moderately easy dinner. Made with 1/4 c. all-purpose flour, 2 lb. beef round steak (1-inch thick), 3 tbsp. shortening, 1/2 c. chopped onion and 1 (16 oz.) can tomato wedges, cut up, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Combine flour, 1 teaspoon salt and 1/4 teaspoon pepper.
Pound into meat.
In large skillet, brown meat on both sides in shortening.
Top with onion and tomatoes; cover and cook over low heat 1 1/2 hours or until tender.
Add green pepper; cook 15 minutes more.
Skim off excess fat.
Thicken juice, if desired. Makes 6 to 8 servings.
