Swiss Steak
Swiss Steak is an moderately easy dinner. Made with 1/4 c. flour, 1 tsp. salt, 1/4 tsp. pepper, 2 lb. round steak, cut 1-inch thick and 2 tbsp. shortening, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Combine flour with salt and pepper; pound into meat.
In family skillet, melt shortening over medium heat, about 3 minutes. Do not allow shortening to smoke.
Brown steak for 5 minutes per side.
Add mushrooms, onions, green pepper and tomatoes.
Simmer over low heat, covered, for 1 1/2 hours, or until tender.
Makes 4 to 6 servings.
