Pound flour into steak.
Brown in hot oil.
Add tomatoes, onion and celery. Cover and cook over low heat or in a moderate oven at 300Β° until tender (2 to 2 1/2 hours), uncovering the last 1/2 hour to cook down sauce to a rich thickness.
