Senate Bean Soup
Senate Bean Soup is an moderately easy dinner. Made with 1 1/2 c. dry northern beans, 1 or 2 meaty ham hocks, 1 medium diced potato, 1 medium onion and 1/4 c. celery, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Soak beans overnight in enough water to cover.
Wash and drain beans.
To the two quarts of water, add beans and ham hocks. Cover and simmer 2 hours.
Add potato, onion and celery. Simmer an hour longer. Remove ham hocks.
Cut up meat and return meat to soup.
Remove 1 cup of beans with liquid.
