This recipe works well when you put the roast in frozen, but it can be done with out freezing the roast.

Salt and pepper the roast on top and bottom.

Place in roasting pan and cover with foil.

Place in 375 degree oven and cook for 1hour, then turn down to 200 degrees and continue cooking for 3-4 hours.

Remove from oven, if the roast isn't brown remove foil and return to oven to brown.

When the roast is done, place on platter.

For gravy, place pan with drippings on stove top and heat on med-high heat to brown.

In a jar, shake up water and flour until well blended, when drippings are browned well pour in water and flour, heat, stirring until thick.

May need to add more salt and pepper to gravy.

Serve roast with hot biscuits and gravy!!!! :4
