Rice Salad (Low-Fat)
Rice Salad (Low-Fat) is an moderately easy dinner. Made with 1 1/2 c. water, 1 1/2 c. minute rice, 1 c. shredded fat-free mozzarella cheese, 1 c. sliced pepperoni, halved and 1 large tomato, chopped, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

In medium saucepan, bring the water to boil.
Stir in rice. Cover and remove from heat.
Let stand for 5 minutes; cool.
In a large bowl, mix the rice with remaining ingredients except the dressing.
Stir in 1/2 cup of dressing.
Toss to mix well.
Chill. Just before serving, toss with remaining dressing to taste.
