Quail Risotto
Quail Risotto is an impressive dinner. Made with 8 quail, 1/3 c. butter, 1 onion, sliced, 1 leek, sliced and 2 sweet peppers, sliced, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Saute the onion in butter; add leek, green pepper and bacon. Cook until tender.
Stuff quail with mixture and place in a heavy, tightly covered pot and cook until tender.
Add rice, salt, pepper and tomato; stir.
Add stock to make approximately 2 2/3 cups liquid.
