Pumpkin Roll

Beat the eggs at high speed for 5 minutes. Add the sugar.
Add the pumpkin and lemon juice. Blend.
Add the flour, ginger, baking powder, cinnamon, nutmeg and salt.
Pour onto a 15 x 10-inch baking pan, lined with foil. Bake at 350Β° for 15 minutes. Remove from oven. Turn on towel sprinkled with powdered sugar. Remove foil and roll towel and cake up. Cool in refrigerator.
