Potato Chili-Cheese Soup
Potato Chili-Cheese Soup is an impressive dinner. Made with 5 large potatoes, 1/2 cube butter, 2 tbsp. olive oil, 3 large green peppers and 3 large onions, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Clean potatoes; chop bite size and put in boiling water.
Cook until tender.
Meanwhile, saute green peppers, onions, salt, cumin, basil, garlic and pepper in butter and olive oil.
Add green chiles.
PurΓ©e 1/2 of potatoes in processor and 1/2 saute in mixer.
Add sour cream, milk, cheese, scallions and remainder of potatoes.
This is a thick, milky soup.
