Pepper Steak with Rice
Pepper Steak With Rice is an moderately easy dinner. Made with 1 lb. lean beef round steak, 2 tbsp. margarine, 1 1/2 c. beef broth, 2 green peppers, cut into strips and 1/4 c. water, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Pound steak to 1/2-inch thickness.
Cut in 1/2-inch wide strips across grain of meat.
Sprinkle with paprika and allow to stand while preparing other ingredients.
Using a large skillet, brown meat in margarine.
Add garlic and broth.
Cover and simmer 30 minutes.
Stir in onions and green peppers.
Cover and cook 5 minutes more.
Blend cornstarch, water and soy sauce.
Stir into meat mixture.
Cook, stirring until clear and thickened for about 2 minutes.
Add tomatoes and stir gently.
Serve over the hot rice.
Serves 4 nicely.
