Pat's Excellent Soup
Pat'S Excellent Soup is an moderately easy dinner. Made with mixed beans, 2 1/2 qt. water or beef, chicken or wild game stock (wild boar is excellent), 12 oz. can tomato sauce, 1 tbsp. each rosemary and thyme and 1 tsp. each sage and basil, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Use enough mixed dry beans to make a 1/2-inch layer in a 3-quart saucepan.
Soak the beans overnight in the water or stock and with the spices stirred in.
Add the rest of the ingredients and bring it all to a boil, stirring occasionally.
Simmer it, covered, for about 2 hours or until the vegetables are of desired consistency.
