Oyster or Mushroom Soup
Oyster Or Mushroom Soup is an moderately easy dinner. Made with 2 medium onions, finely chopped, 3 tbsp. butter, 4 tbsp. flour, 1 qt. chicken broth and 1 qt. shucked oysters or 1 lb. fresh mushrooms, sliced and browned, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
In soup pot, cook onions in butter very slowly over low heat until soft, but not browned.
Add flour; stir to blend.
Add chicken broth and liquid from oysters or mushrooms; simmer 5 minutes until thickened.
Add light cream and oysters or mushrooms; heat to simmer; do not boil.
Season with salt, pepper and mace (a favorite colonial seasoning, the yellow outer coating of nutmeg). Makes about 10 servings.
