Opal's Cornmeal Dumplings
Opal'S Cornmeal Dumplings is an moderately easy dinner. Made with 1 c. water, 1/2 c. yellow cornmeal, 1/2 tsp. salt, 1 egg, beaten and 1/2 c. all-purpose flour, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
In saucepan, combine water, cornmeal and salt; bring to boil. Cook and stir until thickened.
Remove from heat.
Stir a moderate amount of the hot mixture into 1 beaten egg.
Return to hot mixture.
Stir together the flour, baking powder and pepper.
Add to the cornmeal mixture; beat well.
Stir in the corn.
Drop batter by rounded tablespoons into boiling stew mixture.
Cover; simmer until dumplings are done, 10 to 12 minutes.
