New England Clam Chowder is an moderately easy dinner. Made with 4 slices bacon, diced, 4 green onions, chopped, 4 medium potatoes, pared and diced 1/2-inch, 1/2 small green pepper, deseeded and chopped and 2 c. clam juice or water, this recipe delivers authentic, satisfying flavors. In a large saucepan, saute bacon until crisp. Add onions, potatoes and green pepper. Add clam juice or water. Simmer 15 minutes, covered, until potatoes are done. Add salt, pepper, clams and liquid and cream. Heat to simmering.
Do not boil or clams will toughen.
Preparation time
20 minutes. Cooking time: 20 to 25 minutes.
