Mother's Potato Salad
Mother'S Potato Salad is an moderately easy dinner. Made with 5 lb. red potatoes, 1/2 c. distilled vinegar, 1/4 c. water, 1/4 c. sugar and 3/4 c. salad oil, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Boil potatoes with skins on until done, but firm.
When cool, remove skins and slice thin.
In one bowl, mix vinegar, oil, water, sugar, salt and pepper.
In another bowl, put onions and parsley.
Add cut potatoes alternately with onions, parsley and vinegar mix.
Toss from pan to pan to mix.
Stirring well, mush potatoes.
Let set at least 24 hours in refrigerator before serving.
