Mom's Eat Your Veggies Minestrone Soup
Mom'S Eat Your Veggies Minestrone Soup is an impressive dinner. Made with 1 c. dry baby lima beans, 1/4 lb. ground beef, cooked, 1 medium chopped onion, 1 clove fresh minced garlic and 6 c. boiling water, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Cook ground beef; add onion and cook for approximately 3 minutes, stirring.
Add water, bouillon cubes, salt, pepper and lima beans.
Bring to a boil.
Cover and simmer for about 1 hour (until lima beans are tender).
Then add carrots, turnips, celery, tomatoes, bay leaf and basil.
Simmer until veggies are tender (about 30 minutes).
Add cabbage and cook 5 minutes.
Add spinach and cook 5 more minutes.
Taste; season to taste, if needed. Serve hot.
