Molded Avocado Salad
Molded Avocado Salad is an moderately easy dinner. Made with 1 (3 oz.) pkg. lime gelatin, 1 c. boiling water, 1 tbsp. mayonnaise, 1 tbsp. lemon juice and 1/4 c. plus 3 tbsp. cold water, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Dissolve gelatin in boiling water; add mayonnaise and beat until frothy.
Drain pineapple, saving juice.
Add pineapple juice, lemon juice and cold water to gelatin mixture and blend well. Add crushed pineapple and avocados.
Pour into 8-inch square Pyrex dish.
Chill until firm.
Cut into squares and place each square on lettuce leaf to serve.
Makes 8 to 10 servings.
