Lutefisk Pudding
Lutefisk Pudding is an moderately easy dinner. Made with 3 lb. cooked lutefish, 3 c. cooked rice, 3 egg yolks, slightly beaten, 3 c. milk and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Clean and wash fish well.
Put fish, skin side up, in colander.
Place the colander in salted water, 1/3 cup salt to 2 quarts water, in large kettle.
If fish is to be kept firm, simmer until tender, usually about 10 to 15 minutes.
Remove colander and drain fish over the sink.
Place fish on a large platter and serve with melted butter.
