Low-Fat "Refried Beans"
Low-Fat "Refried Beans" is an easy dinner. Made with 3 cans pinto beans, 3 jalapeño peppers, 1 medium onion, 1 clove garlic and 1 tbsp. oil, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Finely chop the onion and peppers and mince the garlic.
Saute in 1 tablespoon oil in a Dutch oven.
Drain the pinto beans, reserving the fluid.
Add beans to onion, pepper and garlic and simmer for about 1 hour.
Mash beans.
If beans are dry, add reserved fluid.
Use mixture for burritos, nachos, etc.
