Lentil Vegetable Soup
Lentil Vegetable Soup is an impressive soup you can prepare in about 1 hour. Made with bag lentils, to 7 large carrots, sliced thin, celery stalks, sliced thin, large onion, peeled (whole) and to 1 1/2 c. chopped fresh spinach, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Saute chopped garlic lightly in olive oil in an 8-quart pot. Add all ingredients, except ditalini.
Simmer about 2 hours, until vegetables are tender.
Add water as needed to fill 7 quarts. Cook and serve ditalini separately.
