Leek and Potato Soup
Leek And Potato Soup is an moderately easy dinner. Made with 2 large leeks, 4 to 5 medium potatoes, 1 slice bacon, 2 tbsp. butter and 2 c. chicken broth, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Clean leeks and cut into 1/2-inch squares.
Peel and dice potatoes.
Cut bacon small and fry over moderate heat. Melt butter.
Add veggies and saute about 5 minutes.
Stir in chicken broth and season to taste. Cover pan and simmer about 30 minutes. Add the milk, a little at a time.
(Do not boil.)
Stir in parsley.
Add grated cheese.
Serves 4.
