Irish Potato Soup
Irish Potato Soup is an moderately easy dinner. Made with 8 medium potatoes, peeled, 2 onions, chopped, 1/4 c. butter, 2 tbsp. chopped parsley and 1/2 tsp. crushed basil leaves, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Cook potatoes and onions together until tender.
Drain and save liquid.
Butter 6 quart saucepan.
Add parsley and basil, blend in flour, salt and pepper.
Gradually stir in cold milk. Add scalded milk and potato water.
Cook over low heat, stirring constantly until thickened.
Add potatoes and onions; mix.
Serve with sprinkled parsley or paprika on top.
