Hungarian Goulash
Hungarian Goulash is an moderately easy dinner. Made with 4 lb. beef, cut in 2-inch pieces, 1 c. hot water, 2 strips bacon or salt pork, 6 medium-sized onions, peeled and coarsely chopped and 3 tbsp. paprika, this recipe delivers authentic, satisfying flavors. Brown beef cubes.
Transfer to Dutch oven.
Rinse skillet with cup of hot water and add to meat.
Chop bacon or salt pork and fry in skillet.
Add onions.
Cook about 5 minutes.
Stir in paprika. Stir into beef.
Add uncooked green peppers and caraway seed. Cook slowly 2 hours, or until meat is tender.
Stir in tomato paste and salt to taste.
