Herbed Potato Soup
Herbed Potato Soup is an moderately easy dinner. Made with 8 medium potatoes, peeled, 2 tbsp. dry onions, 4 tbsp. butter, 2 tbsp. chopped parsley and 1/2 tsp. crushed basil, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cook potatoes and onions together until tender.
Drain; save potato water.
Put potatoes through coarse strainer.
While potatoes cook, melt butter in 6-quart saucepan.
Add parsley and basil.
Blend flour, salt and pepper in, gradually add the cold milk.
Add scalded milk and potato water.
Cook over medium heat, stirring constantly, until mixture thickens slightly.
Stir in potatoes and onions.
Serve with chopped parsley and dust with paprika.
Makes 12 cups.
