Greek Salad
Greek salad, or horiatiki, combines tomatoes, cucumber, feta, olives, red onion, green pepper, oregano, and olive oil. It is chunky, bright, and never dependent on lettuce.

Cut tomatoes and cucumber into generous chunks and slice onion and pepper thinly.
Arrange the vegetables in a shallow bowl with olives.
Place a slab of feta on top rather than crumbling it completely.
Drizzle with olive oil and a little vinegar, then sprinkle oregano and salt.
Serve immediately while the vegetables are crisp and juicy.
