German Potato Salad
This German Potato Salad combines sliced potatoes with bacon, onion, green pepper, hard-boiled eggs, and a hot vinegar-sugar dressing. It is served immediately after the dressing is poured over, so the eggs and vegetables stay distinct.
Boil the potatoes with their skins on, then cool, peel, and slice them.
Dice the bacon, onion, and green pepper.
Fry the bacon in a skillet, then saute the onion and green pepper with it.
Add the diced eggs to the sliced potatoes.
Mix the vinegar, sugar, salt, pepper, and water, then add to the bacon mixture and heat to a boil.
Pour the hot dressing over the potatoes and eggs.
Mix gently and serve immediately.
