Garlic Soup with Greens
Garlic Soup With Greens is an moderately easy dinner. Made with 1 tbsp. olive oil, 1 garlic bulb, peeled and separated into cloves, 2 onions, chopped, 3 bay leaves and 1 tsp. thyme, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

In large pot, add oil, garlic, onions, bay leaves, thyme, allspice and stock; bring to a boil.
Reduce heat and simmer until garlic is tender, about 10 minutes.
Discard bay leaf.
Remove onion and garlic to blender with a small amount of stock; blend until smooth.
Then add garlic and onion mixture to the stock in the pot; heat over low heat while adding milk.
Stir until hot. Add spinach; stir briefly, then serve.
(The hot soup will blanch the spinach.)
