Fish Chowder
Fish Chowder is an moderately easy dinner. Made with 1 lb. haddock fillets, 2 c. water, 1/4 c. chopped onion, 2 tbsp. butter and 2 tbsp. flour, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Boil 2 cups water and add the fish.
Simmer for 15 minutes. Remove fish and save the liquid.
Saute onion in butter.
Add flour, salt and pepper.
Heat until bubbly, then add fish liquid and 1/2 cup water.
Add potatoes and simmer, stirring occasionally for 10 minutes.
Stir in the fish and milk.
Simmer 5 minutes more.
Do not boil.
Serves 6.
