Chilled Cranberry Soup
Chilled Cranberry Soup is an moderately easy dinner. Made with 4 c. fresh cranberries (1 lb.), 3 c. water, 1 1/2 c. sugar, 3-inch stick cinnamon and 1/4 tsp. ground cloves, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
In a 3-quart saucepan, combine cranberries, water, sugar, cinnamon stick and cloves.
Bring to boiling; reduce heat.
Simmer, uncovered, about 5 minutes or until about half of the cranberries are popped.
Remove from heat.
Stir in lemon juice and orange peel.
Cover and chill for 4 to 24 hours.
Before serving, remove cinnamon stick.
