Braised Soy Sauce Chicken
Braised Soy Sauce Chicken is an moderately easy dinner. Made with 4 1/2 to 5 lb. chicken, 2 c. cold water, 2 c. soy sauce, 1/4 c. chinese rice wine or dry sherry and 5 slices fresh ginger root (about 1/8-inch in diameter), this recipe delivers authentic, satisfying flavors. In a pan large enough to hold all chicken, bring to a boil the water, soy sauce, wine, ginger root and sesame seed oil, then add chicken.
Sauce should reach 1/2 up side of chicken.
Reduce heat to moderate and cook 20 minutes.
Turn chicken and stir in sugar.
Simmer 20 minutes longer.
Turn off and let sit for 2 to 3 hours.
