Blueberry Muffins
Blueberry Muffins is an moderately easy dinner. Made with 1 c. superfine sugar, 1 c. milk, 1 1/3 c. all-purpose flour, 3/4 tsp. cinnamon and 1/2 tsp. vanilla, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Preheat oven to 375Β°.
Prepare muffin tin with paper liners. In medium bowl, cream sugar and margarine on low speed of electric mixer until smooth.
Add milk, egg, 2/3 cup flour, baking powder, cinnamon, nutmeg, vanilla and salt and mix just until thoroughly blended.
Gently mix in remaining 2/3 cup flour (batter should still be lumpy).
Fold in the blueberries.
Fill muffin tin liners 3/4 full (muffins will rise 1-inch above pan).
Bake until golden brown, 20 to 30 minutes.
Makes 12 muffins.
