Blueberry-Lemon Muffins
Blueberry-Lemon Muffins is an moderately easy dinner. Made with 1 3/4 c. flour, 2 1/2 tsp. baking powder, 3/4 tsp. salt, 3/4 c. milk and 3/4 c. blueberries, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Stir together flour, sugar, baking powder, lemon peel and salt.
Make a well in center.
Combine egg, milk and oil.
Add this mixture all at once to flour mixture and stir just until moistened.
(Batter will be lumpy.)
Carefully fold in blueberries.
Grease muffin pan or use paper baking cups.
Fill each 2/3 full.
Bake at 400Β° for 20 to 25 minutes.
If desired, dip tops of baked muffins in melted butter and sugar (1/4 cup melted butter and 1/3 cup sugar).
Makes 12 muffins.
