Baked Potato Salad
Baked Potato Salad is an moderately easy dinner. Made with 6 medium potatoes, peeled and sliced thin, 1 c. sour cream, 2 tbsp. flour, salt to taste and 1/4 c. melted butter, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cook potatoes in small amount of water until tender; drain. In greased 2-quart casserole, sprinkle 1 tablespoon bread crumbs over bottom.
Combine sour cream, mayonnaise, flour and onion. Place layer of potatoes in casserole.
Salt to taste.
Add layer of egg slices.
Spread 1/2 creamy mixture over eggs.
Repeat layers.
Sprinkle 2 tablespoons bread crumbs on top.
Drizzle melted butter over top.
Bake at 350Β° for 25 minutes.
Yields 6 to 8 servings.
