Baked Eggplant
Baked Eggplant is an moderately easy dinner. Made with 2 eggplant, 1 onion (medium), chopped, 2 stalks celery, chopped, 1 tomato, chopped and 1 c. small shrimp, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Peel, dice and parboil eggplant.
Saute onion, celery and shrimp in olive oil.
Add tomato and cook.
Season with salt, pepper, a dash of Tabasco sauce, a dash of Worcestershire sauce and 1 bay leaf. When all are blended together, fold in the eggplant.
Place in baking dish. Top with seasoned bread crumbs. Bake at 350Β° for about 20 to 25 minutes.
