Wild Rice Soup
Wild Rice Soup is an moderately easy dinner. Made with 2 tbsp. butter, 1/4 c. flour, 2 c. cooked wild rice, 1 c. half and half and 1 tbsp. minced onion, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

For 2 cups cooked rice, use 2/3 cup uncooked rice; takes about 1 1/2 hours to cook.
Melt butter in heavy saucepan.
Saute onions. blend in flour.
Gradually add broth, stirring constantly, until thickened.
Stir in rice and salt.
Simmer for 5 minutes. Blend in half and half, then dry sherry.
Heat until hot.
Do not boil.
