Vegetarian Spaghetti Sauce
Vegetarian Spaghetti Sauce is an impressive dinner. Made with 2 c. sliced zucchini, 1/2 c. sliced fresh mushrooms, 1/2 c. chopped green pepper, 1/2 c. chopped onion and 1/2 tsp. garlic powder, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
In olive oil, gently saute zucchini, mushrooms, green pepper, onion and garlic powder.
Add tomatoes, tomato paste, water and additional spices.
Stir to break up tomatoes.
Bring the sauce to a boil and continue cooking, uncovered, 20 minutes. Stir occasionally.
Serve over pasta, veal, chicken or beef.
