Vegetarian Chili

Heat olive oil in a large skillet.
Add zucchini, onion, garlic and green pepper.
SautΓ© 10 minutes, until softened.
Transfer to a saucepan and add tomatoes and spices.
Cook, uncovered, over low heat for 10 minutes.
Stir in beans and cook 10 more minutes.
Serve over rice and serve garnished with cheese or sour cream.
