Vegetable Health Salad is an moderately easy dinner. Made with 2 c. chopped cabbage, 2 c. chopped celery, 1 c. chopped carrots, 1 c. chopped green pepper and 1/2 c. chopped pecans, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Combine cabbage, celery, carrots, green pepper, pecans and onion in large bowl; mix well.
Dissolve gelatin in boiling water in bowl.
Add lemon juice, mayonnaise and salt; mix well.
Pour over vegetables; mix well.
Pour into serving dish.
Chill until set.
