Turkey Sweet Potato Soup
Turkey Sweet Potato Soup is an impressive dinner. Made with 2 1/2 c. cubed, peeled sweet potatoes (3 to 4 potatoes), 1 c. sliced celery, 1/2 c. chopped onion, 1/2 tsp. dried marjoram leaves and 1/2 tsp. dried thyme leaves, this recipe delivers authentic, satisfying flavors. In large saucepan or Dutch oven, combine sweet potatoes, celery, onion, marjoram, thyme, cayenne pepper, water and chicken broth.
Bring to a boil.
Reduce heat; cover and simmer 15 minutes or until vegetables are tender.
Stir in turkey, peas and bacon. In small bowl, combine cornstarch and milk; blend well.
Slowly stir into soup; cook and stir until thickened and bubbly.
Makes six 1 1/3 cups servings.
