Tortilla Soup
Tortilla Soup is an easy dinner. Made with 2 cans chicken broth (water added), 4 to 6 tortillas, cut into 1-inch wide strips and fried in oil to make crispy, 2 green onions, chopped and grated sharp cheese, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Make your own chicken use canned.
Heat the chicken broth to a boil, then turn down to a simmer.
Add the amount of tortilla strips you want to.
Don't simmer too long or strips will become mushy.
Into bowls and add green onions and sprinkle with cheese.
Sometimes I will mix everything into the soup and bring it to a boil, remove it from the heat and serve.
