Tortellini Soup
Tortellini Soup is an impressive dinner. Made with 1 lb. italian sausage, 1 c. chopped onion, 2 cloves garlic, sliced, 5 c. beef broth and 1/2 c. water, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Remove casing sausage.
Remove sausage; drain and reserve tablespoon drippings.
Saute onion and garlic in drippings.
Add beef broth, water, wine, tomatoes, carrots, basil, oregano, tomato sauce and sausage.
Bring all to a boil, then reduce heat and simmer 30 minutes uncovered. Skim fat from soup and stir in zucchini, tortellini, parsley and pepper.
Simmer covered
40 minutes.
Sprinkle on Parmesan cheese when serving.
