Tart Beet Salad
Tart Beet Salad is an moderately easy dinner. Made with 1 can shoestring beets, 1 c. chopped celery, 1 green onion, chopped (tops and bottoms), 1 (3 oz.) pkg. lemon jello and 1 tsp. mustard, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Dissolve lemon jello in 1 cup boiling water, then add 1 cup beet juice or cold water.
Add beets, celery, onion, horseradish and mustard; stir.
Pour into individual molds or 8 x 8-inch dish. Delicious with bland meat dishes or cheese strata.
Serves 8.
